Harvest Pie Recipe
Ingredients
| Unsweetened applesauce | 7 3/4 Cup (16 tbs) | |
| Dates | 1 Cup (16 tbs), chopped | |
| Seedless raisins | 1/2 Cup (16 tbs) | |
| 1/2 cup chopped, dried peaches | ||
| 1/2 cup chopped, dried apricots | ||
| Honey | 3 Teaspoon | |
| 2 tsp grated lemon rind | ||
| 1 cup chopped walnuts or a mixture of chopped nuts and chopped sunflower seeds | ||
| Safflower oil | 1/2 Teaspoon | |
Directions
Combine applesauce, fruit, honey, and lemon rind in a saucepan.
Simmer, uncovered, over low heat, stirring frequently, about 15 minutes.
It should be very thick.
Cool.
Pour into an unbaked 9-inch pie crust of your choice.
Sprinkle nuts over fruit.
Bake at 375° 30 minutes, or until crust is baked and top is lightly browned.
