1/3 cup sugar
 
1 tablespoon cornstarch
 
1/4 teaspoon salt
 
1/4 cup cider vinegar
 
1 can or jar (16 ounces) crinkle-cut-style or diced beets, drained; reserve
 
1/2 cup liquid
 
1 tablespoon butter or margarine

Directions

1. Combine sugar, cornstarch and salt in a 1-quart glass casserole. Stir in vinegar and reserved beet liquid. Cook in microwave oven 3 to 4 minutes at High, or until mixture boils and thickens slightly;
stir twice.
2. Add beets and butter to thickened sauce; stir. Cook in microwave oven 2 to 3 minutes at High, or until thoroughly heated; stir once.
