Directions
In saucepan combine sugar, cornstarch, and salt.
Stir in reserved beet liquid, the vinegar, and butter.
Cook, stirring constantly, till mixture is thickened and bubbly.
Stir in beets.
Cook until heated through.
Makes 2 servings.
Microwave cooking directions: Drain beets; reserve 1/4 cup liquid.
In a 2-cup glass measure combine sugar, cornstarch, and salt.
Stir in reserved liquid, vinegar, and butter.
Cook, uncovered, in countertop microwave oven till thick and bubbly, about 1 minute; stir every 15 seconds.
Stir in beets.
Micro-cook, covered, till hot, about 2 minutes.
