Haricots Verts Aux Amandes Recipe
Ingredients
| 1 1/2 pounds tender young string beans; snap off ends | ||
| 1 small onion, chopped fine | ||
| Butter | 3 Tablespoon | |
| Slivered almonds | 3 Tablespoon, toasted | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Cook beans in boiling salted water until al dente (cooked but still crisp).
Drain.
Dry on a cloth or absorbent paper.
Saute onion in 2 tablespoons butter until soft and slightly yellow.
Season with salt and pepper.
Add beans plus remaining butter.
Saute until butter begins to brown.
Add almonds and toss lightly.
