 Butter4 1/2 Ounce
 Zest of lemon or orange - 1, grated
 Icing Sugar3 Ounce
 Lemon or orange - ½, juiced or Dark rum or brandy - 3 tablespoons (3 x 15 ml. spoon)

Directions

MAKING
1. In a bowl, take butter. Beat it to achieve a creamy texture.
2. Add grated lemon or orange zest.
3. Add icing sugar a little at a time, beating vigorously.
4. Add lemon or orange juice, rum or brandy. Beat it again.
5. Check the taste. Refrigerate to set for 1-2 hours.

SERVING
6. Serve Hard Sauce chilled. It can be kept up to 2 weeks in the refrigerator.
