Hard Cooked Eggs With Spinach Recipe
Ingredients
| Onion | 1/4 Cup (16 tbs), chopped | |
| Garlic | 1 Clove (5gm), minced | |
| Butter/Margarine | 1 Tablespoon | |
| 1 10-ounce package frozen chopped spinach, thawed and drained | ||
| Tomato sauce | 1 8 Ounce | |
| 1/4 cup diced salami or mortadella | ||
| Snipped parsley | 2 Tablespoon | |
| Salt | 1/4 Teaspoon | |
| Dried oregano | 1/4 Teaspoon, crushed | |
| Pepper | 1/8 Teaspoon | |
| 6 hard-cooked eggs, halved lengthwise | ||
Directions
In medium skillet cook onion and garlic in butter or margarine till onion is tender.
Stir in spinach, tomato sauce, salami or mortadella, parsley, salt, oregano, and pepper.
Cover and simmer for 10 minutes.
Arrange egg halves, cut side up, in the spinach mixture.
Cover and cook for 3 to 5 minutes longer or till eggs are heated through.
Sprinkle eggs with additional snipped parsley, if desired.
