Hamburgers Stuffed With Mozzarella and Red Peppers Recipe
|Chopped roasted red peppers||1⁄4 Cup (4 tbs), patted dry|
|Diced part skim mozzarella cheese||1⁄4 Cup (4 tbs)|
|Black olives||4 , pitted and coarsely chopped|

In another medium-size bowl, combine the beef, garlic, salt, and black pepper.
2 Using your hands, shape the beef mixture into 8 thin patties about 3 1/2 inches in diameter.
Spread the cheese mixture on top of 4 patties, dividing the amount equally.
Place the 4 remaining patties on top and pinch the edges to seal.
3 Preheatthe broiler, setting the rack 6 inches from the heat.
Arrange the stuffed burgers on a broiler pan and broil for 3 to 4 minutes on each side for medium-rare, 4 to 5 minutes for medium, or 5 to 6 minutes for well-done.
