Hamburger Soup Recipe
The hamburger soup is a hearty vegetable and hambergur soup cooked in beef broth and tomato soup. Hearty and filling, I love to dish this out as a meal with bread rolls and wholemeal biscuits!
Ingredients
1 lb hamburger
1 medium onion, chopped
1/2 cup diced celery
1/2 cup green pepper, optional
2 Tbsp oil
2 tsp salt
Pepper to taste
2 Tbsp sugar
1 Tbsp parsley
1 bay leaf
1/4 tsp paprika
2 cups diced carrots
2 cups diced potato
28 oz can tomatoes
1 can tomato soup
2 cups hot water
4 cups beef broth
8 Tbsp barley (or 6 cups coarsely chopped cabbage)
Directions
Saute beef and onion in oil until lightly browned.
Combine all ingredients (except cabbage, if using).
Simmer, uncovered, for 1 hour, then covered for 1 hour.
If using cabbage, add the last hour.
