1 1/2 pounds lean ground beef
1 teaspoon salt
Dash pepper
1 large onion, chopped
1 tablespoon oil
1/4 teaspoon oregano
1 can tomatoes
1 can sliced carrots, drained
1 cup cooked potatoes, diced
1 cup water or broth
3 tablespoons flour
1 packet dry Italian salad dressing mix
Directions
Mix beef with seasonings; shape into small balls.
Mix onion and oil in 10 inch ceramic skillet.
Cook in Radarange oven 1 1/2 minutes; stir, cook 1 1/2 minutes more.
Arrange meat balls in a single layer in 2 quart oblong baking dish; cover with paper towels.
Cook 5 minutes; turn dish, cook 3 to 5 minutes more.
Drain meatballs, add to cooked onions in skillet and add tomatoes and vegetables.
Mix together water or broth, flour, and salad dressing mix, and stir into skillet.
Cover, cook in oven 5 minutes.
Stir well; cook uncovered in oven 3 to 4 minutes more.
