Ingredients

 Madeira1/3 Cup (16 tbs)
 Prunes1/2 Pound, pitted
 2 coarsely chopped onions
 Dried thyme1/4 Teaspoon
 White wine1/3 Cup (16 tbs)
 Tomato Paste1 Teaspoon
 Sugar1/2 Teaspoon
 Cooked ham slice4
 Butter2 Tablespoon
 All purpose flour3 Tablespoon
 Creme fraiche1/4 Cup (16 tbs)
 Salt To Taste
 Pepper1

Directions

Pour the Madeira and 1/3 cup (41/2 tablespoons) of water into a bowl.
Add the prunes.
Heat in the microwave oven for 3 minutes on HIGH.
Puree the onions in a food processor.
Put the puree in a bowl with the thyme, white wine, tomato paste (puree) and sugar.
Cover and microwave on HIGH for 5 minutes.
Roll the ham slices and put in a dish.
Drain the prunes with a slotted spoon and arrange around the ham.
Put the butter into a bowl and melt for 1 minute on HIGH.
Stir in the flour and add the cooking liquid from the prunes, whisking constantly.
Cook on HIGH for 1 1/2 minutes.
Whisk the sauce again, adding the sour cream (creme fraiche), onions and wine sauce.
Force the mixture through a strainer by pushing with the back of a wooden spoon.
Season with salt and pepper and stir well.
Pour this sauce over the ham and prunes.
Cover and microwave on HIGH for 2 minutes.
