Ingredients

 
3 medium potatoes
 
1 tbsp (15 mL) butter
 
3 green onions, finely chopped
 
Fresh ground pepper to taste
 
A dash of curry powder (optional)
 
1 cup (250 mL) ham, cooked and diced
 
3 eggs
 
1/4 cup (60 mL) milk

Directions

Scrub potatoes, do not peel, make 2 or 3 incisions in each with the point of a knife.
Microwave 7 minutes at HIGH.
Peel the potatoes, dice and place in a microwave-safe baking dish.
Place the butter in a microwave-safe dish and melt 1 minute at HIGH, add the green onions.
Microwave another minute at HIGH.
Sprinkle with pepper and curry to taste.
Stir, pour over the potatoes, add the ham, stir to mix.
Beat the eggs with the milk and pour over all.
Stir lightly and microwave 3 to 4 minutes at HIGH, stirring once.
Serve.
