 Boiled ham2 , rectangular slices cut 0.25 inch thick
 Processed cheese slice2
 Frozen broccoli spears10 Ounce, cooked and drained
 Butter/Margarine1 1⁄2 Teaspoon
 All purpose flour1 1⁄2 Teaspoon
 Salt1⁄8 Teaspoon
 Prepared horseradish1 1⁄2 Teaspoon
 Prepared mustard1 Teaspoon
 Worcestershire sauce1⁄4 Teaspoon
 Grated onion1⁄4 Teaspoon
 Egg yolks1 , slightly beaten
 Pineapple juice1⁄2 Cup (8 tbs)
 Milk1⁄4 Cup (4 tbs)

Directions

Top each ham slice with slice of cheese.
Place half the cooked broccoli on each.
In heavy saucepan, melt butter.
Blend in flour, salt, horseradish, mustard, Worcestershire sauce, and onion.
Combine egg yolk and pineapple juice; blend into butter mixture.
Stir in milk.
Cook over low heat, stirring constantly, till thick and bubbling.
Spoon about 1 tablespoon sauce over broccoli.
Roll ham and cheese around broccoli; secure with wooden picks.
Place rolls in shallow baking dish.
Cover; bake in moderate oven (350°) about 25 minutes.
Reheat remaining sauce, adding milk if necessary.
Spoon hot mustard sauce over ham rolls.
Garnish with pineapple slices and spiced crab apples.
