Ingredients
1 recipe double pie crust
2 tablespoons butter
1/4 cup flour
3/4 cup milk
1/4 pound mushrooms, chopped
1 1/2 cups cooked ham, diced
1/4 teaspoon pepper
1 small egg, beaten
Directions
Prepare pastry.
Melt butter in 2-quart glass or ceramic casserole for 20 seconds.
Stir in flour with a wire whisk.
Add milk gradually while continuing to stir.
Cook for 3 minutes or until thickened to a sauce.
During cooking, stir twice with whisk to ensure a smooth sauce.
Stir mushrooms, ham, and pepper into the sauce.
Roll pastry into an oblong shape, 24 X 8 inches.
Cut in half widthwise.
Trim edges.
Place one piece of pastry on a shallow rectangular glass casserole.
Fold the other piece in half; cut out the center to leave a 1 inch border.
Cut the center piece into strips.
Spoon sauce onto pastry base, spreading , carefully to within 1 inch of the edges.
Moisten edge of pastry and lay strips across the sauce.
Place pastry border around the edge.
Press to seal.
Brush pastry with beaten egg.
Cook in oven on highest setting for 8 minutes.
Rotate casserole one-quarter of a turn after 4 minutes.
