Ingredients

 
2 tablespoons olive oil
 
1 clove garlic, minced
 
8 7- to 8-inch flour tortillas
 
1 1/2 cups shredded Monterey Jack, Cojack, or Chihuahua cheese (6 ounces)
 
4 thin slices fully cooked ham
 
1 medium mango, peeled and thinly sliced or 1 large tomato, thinly sliced
 
2 tablespoons fresh cilantro, chopped
 
1 cup salsa

Directions

Combine olive oil and garlic.
Brush one side of four tortillas with some of the olive oil mixture.
Place tortillas, oiled side down, on waxed paper to assemble.
Sprinkle each with about 1/3 cup of the cheese, spreading cheese to within 1/4 inch from edge.
Place a slice of ham on top of cheese.
Top each ham piece with mango slices.
Sprinkle lightly with cilantro.
Top each with remaining tortillas.
Brush tops of tortillas with remaining olive oil mixture.
Arrange tortillas on the cooking grill.
Grill 30 to 45 seconds per side or till tortillas are lightly browned.
Remove from grill and cut each into quarters.
Serve with salsa.
