Ham-And-Lima Bake Recipe

Ingredients

 
1 pound (2 cups) large dried lima beans
 
4 cups water
 
2 teaspoons salt
 
1 cup grated raw carrots
 
4 slices bacon
 
2 cups cubed cooked ham
 
2 tablespoons vegetable oil
 
1 large onion, chopped (1 cup)
 
1 clove of garlic, minced
 
1 can (about 1 pound) tomatoes
 
1/4 cup molasses

Directions

1 Cover lima beans with water in large kettle; heat to boiling; cover; cook 2 minutes.
Remove from heat; let stand 30 minutes.
2 Reheat beans to boiling; add salt, grated car-rot and bacon (Do not cut slices.).
Cover; cook 45 minutes, or until skins of beans burst when you blow on a few in a spoon.
3 While beans cook, brown ham lightly in vege-table oil in large frying pan.
Push to one side of pan and saute onion and garlic lightly; stir in tomatoes and molasses; cover; simmer 15 minutes.
4 Remove bacon from beans and save for next step.
Stir ham mixture into beans; pour into a 12-cup baking dish; cover tightly.
5 Bake in slow oven (325°) 2 hours; remove cover; crisscross saved strips of bacon on top of casserole.
Bake for 1 hour longer, or until beans are tender.
