Ham And Chicken Crepes Recipe

Ingredients

1/4 cup butter or margarine
4 tablespoons whole wheat flour
2 chicken bouillon cubes
2 cups water
2 cups diced ham
2 cups diced, cooked chicken
1 cup cooked, cracked grain
1/2 cup half and half or light whipping cream
Salt and pepper
20-25 Basic Crepes
3 eggs
1/21 cup fine bread crumbs
Butter or margarine
Chopped fresh parsley

How to make Ham And Chicken Crepes

Melt the 1/2 cup butter or margarine in a medium saucepan.
Add flour, and cook over medium heat for 1 or 2 minutes, stirring constantly.
Dissolve bouillon cubes in water, and add to the flour and butter.
Stir until thickened.
Add meats, cracked wheat, and cream.
Salt and pepper to taste.
Place approximately 1/4 cup of filling on each crepe, and fold or roll as desired.
Cover, and chill crepes 2 to 3 hours.
Beat the eggs.
Dip crepes in egg, and then roll in bread crumbs.
Place in a lightly greased casserole dish.
Dot with butter or margarine.
Bake in a 375° F.
Oven for 20 to 25 minutes.
Sprinkle with chopped fresh parsley before serving.
