2 cups biscuit mix 500 mL
 
2 tsp dry mustard 10 mL
 
1 egg, beaten
 
1/2 cup milk 125 mL
 
1 can (6.5 oz [184 g]) flaked ham, flaked with a fork
 
11/2 cups grated Cheddar cheese 375 mL

Directions

In a medium bowl, combine biscuit mix, mustard, egg and milk with a fork.
Stir in flaked ham and cheese just until moistened.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 20 to 25 minutes or until done.
VARIATION :
If you want a sweet muffin instead, use 2 tbsp (25 mL) sugar in place of the dry mustard.
