Ingredients
1 1 pound slice fully cooked ham
1 18 ounce can sweet potatoes
2 small apples, cored and cut into thin wedges
1 teaspoon finely shredded orange peel
3/4 cup orange juice
2 teaspoons cornstarch
1 teaspoon soy sauce
1 teaspoon grated gingerroot
1 clove garlic, minced
Directions
Trim excess fat from ham; cut into 4 equal portions.
Cut up any large sweet potatoes.
Arrange sweet potatoes and apple wedges in a 12x7 1/2x2 inch baking dish.
Arrange ham pieces atop sweet potatoes and apples.
In a saucepan combine orange peel, orange juice, cornstarch, soy sauce, gingerroot, and garlic.
Cook and stir till thickened and bubbly.
