Ingredients

 
1 fully cooked smoked ham center slice, 3/4 inch thick
 
1 cup orange juice
 
1/2 cup golden or dark seedless raisins
 
2 tablespoons red-currant jelly
 
1 tablespoon water
 
2 teaspoons cornstarch
 
1 8-ounce can sliced cling peaches, drained and chopped

Directions

1. Trim several pieces of fat from ham slice; slash fat remaining. In 12-inch skillet over medium-high heat, heat fat pieces until lightly browned; using spoon, press and rub fat over bottom of skillet to grease it well; discard pieces of fat. Add ham slice' to fat in skillet, and cook until lightly browned on both sides and heated through. Remove ham slice to warm platter; keep warm.
2. Into skillet, stir orange juice, raisins, and currant jelly; heat to boiling. Reduce heat to low; cover and simmer 15 minutes to blend flavors.
3. In cup, blend water and cornstarch until smooth; stir into mixture in skillet and cook over medium heat, stirring constantly, until mixture thickens slightly and boils; boil 1 minute. Add peaches; heat through.
