Ham Ratatouille Recipe
Ingredients
4 onions
2 leeks
6 carrots
2 tablespoons vegetable oil
1 cucumber
6 tomatoes
2 cloves garlic, pressed
1 can tomato paste
1 teaspoon salt
Pepper to taste
1 (1-pound) canned ham
Directions
1. Rinse the vegetables. Cut the onions and tomatoes in wedges. Cut the leeks and carrots on the bias and the cucumber in the shape of half moons.
2. Warm the oil in a skillet. Add the onions and carrots and simmer without browning. Add the cucumbers and the tomatoes.
3. Stir in the garlic and tomato paste. Add salt.
4. Cover and simmer 10 minutes.
5. Add the gelatin from the canned ham.
6. Cut the ham in strips and add to mixture. Heat thoroughly.
