10 pound ham
4 bay leaves
8 peppercorns
1 bottle Madeira wine
Directions
Soak ham in cold water overnight.
Drain.
In large pot, cover drained ham in boiling water.
Add bay leaves and peppercorns and cook slowly 2 1/2 hours.
Drain off liquid.
Pour wine over ham and simmer at least 1/2 hour, basting with wine.
