3 tbsp (45 ml) butter
 
3 Cups (750 ml) ham, diced
 
1 chopped onion
 
2 garlic cloves, chopped
 
10 oz (284 ml) canned apricots
 
1/4 Cup (60 ml) wine vinegar
 
3/4 Cup (180 ml) beef stock
 
3/4 Cup (180 ml) chicken stock
 
Salt and pepper
 
1/4 tsp (1 ml) rosemary
 
1/2 tsp (2 ml) coriander
 
1 tsp (5 ml) honey

Directions

–  In a skillet, melt butter and saute ham, onion and garlic.
–  Add apricot syrup and wine vinegar and let liquid reduce by two-thirds.
–  Pour beef and chicken stocks into liquid, season with salt, pepper, rosemary and coriander, then add honey and halved apricots.
–  Let mixture simmer for 20 minutes and serve.
