Directions

Put the ham, cider, onion and carrot into a large saucepan over moderate heat.
Bring to a boil, skimming the fat and scum from the surface.
Reduce the heat to low, cover the pan and simmer for 1 1/4 hours (or allow 25 minutes per pound), until the ham is cooked.
Remove the pan from the heat and let the ham cool in the cooking liquid.
When the liquid is cold, transfer the ham to a board.
Skin the ham, then press the bread crumbs into the skinned side.
It is now ready to be served.
