Ingredients
8 oz. cooked ham
4 hard boiled eggs
Seasoning
1/2 pint tomato juice
1 or 2 oz. cream or cottage cheese
1 dessertspoon powder gelatine
Directions
Dissolve the powder gelatine in the very hot tomato juice, softening it first in a tablespoon water.
When cold, but not set, stir in 2 sliced hard boiled eggs and the diced ham.
Put into a rinsed mould and allow to set.
Turn out and serve on a bed of lettuce.
Halve the other 2 hard boiled eggs, take out the centre yolk, mash, season and mix with a little cream cheese.
Pile back into the white cases and cut into quarters, so you have 8 portions, and arrange these round the mould.
