2 lb. meaty ham bone
1 bay leaf
2 cup dried green split peas
1 cup onions, chopped
1 cup celery, cubed
1 cup carrots, grated
Salt and pepper to taste
Directions
Cover ham bone and bay leaf with water.
Simmer for 2 to 254 hours.
Remove bone and strain liquid.
Refrigerate overnight.
Remove lean meat from bone; set aside.
Remove fat from surface of liquid.
Heat liquid; add enough water to make 2 1/2 qt. (2 1/2 L).
Add peas; simmer for 20 minutes.
Remove from heat and allow to stand 1 hour.
Add onions, celery, carrots, and lean pieces of ham.
Add salt and pepper.
Simmer for 40 minutes.
Stir occasionally.
Simmer for 2 to 254 hours.
