Ingredients
| 4 cups loosely packed spinach | ||
| Onion | 1 , sliced | |
| Butter | 2 Teaspoon | |
| Eggs | 5 | |
| 1 cup smooth ricotta cheese | ||
| Dried basil | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1 Pinch | |
| Parmesan cheese | 1/2 Cup (16 tbs), grated | |
| Black forest ham | 1/4 Pound, chopped | |
Directions
Rinse spinach; place in 12-cup (3 L) casserole with just the water clinging to leaves.
Cover with lid or vented plastic wrap and microwave at High for 5 to 6 minutes or just until wilted, stirring once.
Drain and rinse under cold running water.
Squeeze out excess moisture, chop coarsely and set aside.
In small bowl, microwave onion and butter at High for 1 to 2 minutes or until onion is softened.
Set aside.
In food processor, combine eggs, ricotta cheese, basil, salt and pepper; process until smooth.
Transfer to bowl; stir in Parmesan, ham, reserved spinach and onion mixture.
Pour into greased 9- or 10-inch (23 or 25 cm) quiche dish or pie plate; microwave, uncovered, at Medium (50%) for 12 to 15 minutes or until almost set in center, rotating twice.
Let stand for 5 minutes.
