Ingredients
3 tablespoons butter or margarine
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
1 1/2 cups milk
1 1/2 cups (6 ounces) shredded Cheddar cheese
4 cups cooked potato slices (about 5 medium potatoes)
1/4 cup chopped onion
3 cups cubed cooked ham (about 1 pound)
Directions
1. Melt butter in a glass measuring cup in microwave oven (about 30 seconds at High). Stir in flour, salt and pepper until smooth. Gradually add milk, stirring constantly.
2. Cook uncovered in microwave oven 3 1/2 to 4 minutes at High, or
until thickened; stir twice.
3. Add 1 cup cheese; stir until melted.
4. Preheat convection oven to 450°F.
5. Layer potatoes, onion and ham in a 2-quart glass casserole. Pour cheese sauce over top. Sprinkle with remaining cheese.
6. Place casserole on bottom metal rack. Cook in convection oven 20 minutes at 450°F, or until cheese is crusty and brown on top.
