Ingredients
1 cup chopped onion
1/2 cup sliced celery
2 tablespoons butter or margarine
1 cup hot water
1 HERB-OX® chicken flavor bouillon cube or 1 teaspoon instant chicken boullion
3 cups half-and-half
3 cups (18 ounces) diced CURE 81 ham
1 (16-ounce) loaf pasteurized process cheese spread, cubed
1 (12-ounce) can beer
3 tablespoons all-purpose flour
Popcorn (optional)
Directions
In Dutch oven over medium-high heat, saute onion and celery in butter until tender.
In small liquid measuring cup, combine water and bouillon; set aside.
Add half-and-half, ham, cheese, beer and 3/4 cup broth to onion and celery mixture.
Cook, stirring constantly, until cheese melts.
Combine remaining 1/4 cup broth and flour; stir until smooth.
Add flour mixture to soup, stirring constantly.
Cook, stirring constantly, until slightly thickened.
Sprinkle individual servings with popcorn, if desired.
