Ingredients

 Bean thread2 Ounce
 Bean sprouts3 Ounce
 Chicken Stock - 2 pints 1-1 ltr
 Light soy sauce1 Tablespoon
 Parma ham or lean English smoked bacon - 3 oz 75g, shredded
 Coriander2 Tablespoon, finely chopped
 Spring onions2 Tablespoon, finely chopped

Directions

GETTING READY
1. In a large bowl of hot water, place the noodles and let them soak for 20 minutes or until they are soft. Drain them thoroughly and then cut the noodles into 2 inch (5 cm) pieces.
2. Cut the ends off the bean sprouts.

MAKING
3. In a large stock pot, pour in the chicken stock and bring to a strong simmer.
4. Add the rest of the drained noodles and soy sauce and simmer for 2 minutes. Add the rest of the ham or bacon, coriander and spring onions, and simmer for 30 seconds.
5. Top with the bean sprouts and simmer for another 30 seconds.

SERVING
6. Serve hot immediately
