Ingredients

2 tbsp (30 mL) butter
1 large onion, chopped fine
2 garlic cloves, chopped fine
1 small green pepper, diced
1 tomato, peeled and chopped
1 cup (250 mL) potatoes, peeled and chopped
1/2 cup (125 mL) water or clam juice
1 tsp (5 mL) salt
1/2 tsp (2 mL) pepper
1 tsp (5 mL) dill or marjoram
4 to 6 halibut or cod fillets

How to make Halibut Stew

Place the butter in a microwave-safe bowl and melt 1 minute at HIGH.
Add the onion, garlic, green pepper and stir together.
Microwave 2 minutes at HIGH.
Stir and add the remaining ingredients except the fish.
Stir well, microwave 5 minutes at MEDIUM-HIGH.
Cut the fillets into individual portions and place them in the hot mixture.
Salt and pepper lightly.
Cover and microwave 5 minutes at HIGH.
Let stand 3 minutes, then serve with hot French bread.
