Ingredients

 
6 oz. halibut fillet, cut in cubes
 
greaseproof paper
 
1 tbsp grated ginger
 
1 tbsp sesame oil
 
1 1/2 cups sunflower oil
 
black pepper
 
salt
 
1 tbsp minced spring onion
 
1 tbsp dry sherry

Directions

Place halibut cubes in a bowl.
Add sherry to the bowl.
Add salt and pepper.
Toss them well.
Macerate it for 30 minutes.
On the greaseproof paper, brush with sesame oil.
Put a slice of fish on the paper.
Add ginger to the fish.
Put onion on the fish.
Close the paper. Seal it with clips.
Heat sunflower oil in a pan at 350 degrees F.
Add sealed fish to the oil.
Fry for 3 minutes.
Drain it on a paper.
Open the seal.
Enjoy your fish!
