Halibut With Tomatoes Recipe
Ingredients
2 tbsp olive oil
4 6 oz halibut steaks
Salt and pepper
2 tbsp onion, chopped
28 oz canned spicy tomatoes, drained
1 tbsp tomato paste
1 cup fish broth or stock, heated
1 green bell pepper, minced
1 lemon, sliced
Directions
Preheat oven to 350 °F (175 °C).
In a skillet, heat 1 tbsp (15 mL) oil.
Cook halibut steaks 3 minutes each side.
Season.
Remove from skillet.
Transfer to an ovenproof dish.
Continue cooking in oven 5-6 minutes.
Meanwhile, in the same skillet, heat remaining oil.
Cook onion 2 minutes.
Add tomatoes, tomato paste, hot broth and bell peppers.
Adjust seasoning.
Cook 4 minutes.
Spoon tomato sauce into a serving dish.
Place halibut steaks on top.
Garnish with lemon slices.
