Halibut With Mango Sauce Recipe
Ingredients
| 6 (4-ounce) halibut steaks (3/4 inch thick) | ||
| Lemon juice | 1/4 Cup (16 tbs) | |
| Garlic | 1 Tablespoon, minced | |
| Olive oil | 1 Tablespoon | |
| 1 1/2 cups peeled, chopped mango | ||
| Sweet red pepper | 1/4 Cup (16 tbs), chopped | |
| 3 tablespoons chopped green onions | ||
| Brown sugar | 1 Teaspoon | |
| Garlic | 1/2 Teaspoon, minced | |
| Vegetable cooking spray | ||
Directions
Place halibut steaks in a shallow dish.
Combine lemon juice, 1 tablespoon garlic, and olive oil; pour over steaks.
Cover and marinate in refrigerator 1 hour, turning occasionally.
Combine mango, sweet red pepper, green onions, brown sugar, and 1/2 teaspoon garlic in a small saucepan.
Cook over medium heat 6 minutes or until thoroughly heated, stirring frequently.
Remove steaks from marinade; discard marinade.
Coat grill rack with cooking spray; place on grill over medium-hot coals.
Place steaks on rack, and cook 6 minutes on each side or until fish flakes easily when tested with a fork.
Transfer steaks to a large serving platter, and spoon mango sauce evenly over steaks.
Garnish with fresh parsley sprigs, if desired.
