Halibut With Fresh Fruit Recipe
I got this halibut with fresh fruit recipe from my neighbor who is an excellent cook. Ingredients
3 tbsp (45 ml) butter
2 halibut steaks, cut in 2
1 mandarin, peeled and sliced in rings
2 bananas, peeled and sliced thick
1/2 cup (125 ml) heavy cream
1 tsp (5 ml) chopped fresh parsley
1/4 tsp (1 ml) paprika
Salt and pepper
Juice 1 lemon
Directions
Preheat oven to 150°F (70°C).
Heat butter in large frying pan.
When partly melted, add fish and season well.
Cover and cook 4 minutes over medium heat.
Squeeze in lemon juice and turn fish over; continue cooking another 4 minutes covered Season well.
Remove fish from pan and keep hot in oven.
Add mandarin and bananas to frying pan; cook 2 minutes over high neat.
Mix in cream, parsley and paprika; season well.
Cook 2 minutes, then pour over fish.
