Ingredients

 
Loaf
 
2 slices bread, made into crumbs
 
1/2 cup evaporated skimmed milk
 
18 ounces poached, flaked halibut or salmon
 
1/4 cup chicken bouillon
 
1/4 cup cooked pureed celery (optional)
 
1/2 teaspoon onion salt
 
Dash paprika or cayenne pepper
 
Lobster Sauce
 
1 slice bread, made into crumbs
 
1 cup evaporated skimmed milk
 
1/4 cup clam juice or chicken bouillon
 
6 ounces cooked lobster, cut into small dice
 
Dash paprika

Directions

In mixing bowl, soak crumbs in milk, add remaining ingredients for loaf and mix well.
Pack lightly into non-stick loaf pan.
Set pan into another pan holding hot water and bake at 350° F. for 1 hour.
Let cool slightly.
To prepare sauce, combine ingredients for sauce and heat gently in double boiler, or use very low heat (evaporated skimmed milk will curdle if it boils).
