Halibut Baked In Cream Recipe
Ingredients
2-pound slice of halibut, or halibut steaks
Salt and pepper
1 cup (1/2 pt.) whipping cream
1 can (1 lb.) sliced tomatoes, drained;or 2 thoroughly ripe tomatoes, peeled and sliced
1 medium-sized onion, thinly sliced
3 tablespoons butter
Directions
Lay halibut in a close-fitting, buttered, shallow baking dish or high-rimmed ovenproof platter.
Sprinkle with salt and pepper and pour cream over it.
Cover with canned tomatoes or with salted slices of fresh tomatoes; and top with onions.
Dot with butter.
Cover dish tightly with foil.
Bake in a 375° oven 20 minutes.
Remove foil and spoon cream over fish.
Continue baking about 15 minutes, basting occasionally with the cream, until fish flakes easily.
