Directions

GETTING READY
1.Preheat the oven to 450 degrees Farenheit.

MAKING

FOR THE PORK BELLY
2.Heat a skillet and place the pork belly slices on it.
3.Cook it until fat is rendered and it is brown and slightly crispy on either sides.
4.Finish it in the oven for 10 minutes.

FOR THE CARAMELIZED ONIONS
5.Heat a medium pan and pour the olive oil in it.
6.Add the sliced onions.
7.Season with salt and pepper.
8.Cook until the onions look brown and caramelized and de glaze the pan with the white wine.
9.Reduce the white wine and set aside the caramelized onions.

FINALIZATION
10.On a plate, spoon in the chilled soybean puree in the center.
11.Place the caramelized onions next to it.
12.Place the crispy pork belly on the soy bean puree.
13.Drizzle with the chili garlic sauce.

SERVING
14.Serve right away.
