 Haddock fillets2 1/2 Pound
 Salt1 1/2 Teaspoon
 Black pepper1/2 Teaspoon
 Garlic1 Clove (5gm), minced
 Lemon juice4 Tablespoon
 Onions3 Large, sliced
 Tomatoes6 Large, sliced
 Parsley2 Tablespoon, minced
 Olive oil1/2 Cup (16 tbs)

Directions

Sprinkle fish with 1/2 teaspoon salt, pepper, garlic, and 2 tablespoons, lemon juice.
Let stand for 15 minutes; place in greased shallow baking dish.
Cover with layers of onions, tomatoes, and parsley, sprinkling with remaining salt.
Pour oil and remaining lemon juice over.
Bake, uncovered at 350° for 45 minutes, or until fish is easily flaked with a fork and still moist.
