Haddock With Tomato Wine Sauce Recipe
Ingredients
| Onion | 1 , chopped | |
| Oil | 2 Tablespoon | |
| 1 x 200 g / 8 oz. can tomatoes | ||
| 50 g / 2 oz. mushrooms, sliced | ||
| Anchovies | 4 , chopped | |
| 125 ml / 1/4 pint white wine | ||
| Parsley | 1 Tablespoon, chopped | |
| 1 packet commercial frozen breaded haddock portions | ||
| Fat or oil for frying | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
MAKING
1) Heat oil and fry onion till soft.
2) Add to it tomatoes, mushrooms, anchovies, wine and parsley. Add seasoning to taste.
3) Stir frequently and cook for 20 minutes.
4) Keep it in a packet and fry in oil.
SERVING
4) In a serving dish serve haddock with the sauce
TIPS
Freeze the sauce in a tight container. Reheat in a saucepan before serving simmering in low heat.
