Ingredients

 Onion1 , chopped
 Oil2 Tablespoon
 1 x 200 g / 8 oz. can tomatoes
 50 g / 2 oz. mushrooms, sliced
 Anchovies4 , chopped
 125 ml / 1/4 pint white wine
 Parsley1 Tablespoon, chopped
 1 packet commercial frozen breaded haddock portions
 Fat or oil for frying
 Salt To Taste
 Pepper To Taste

Directions

MAKING
1) Heat oil and fry onion till soft.
2) Add to it tomatoes, mushrooms, anchovies, wine and parsley. Add seasoning to taste.
3) Stir frequently and cook for 20 minutes.
4) Keep it in a packet and fry in oil.

SERVING
4) In a serving dish serve haddock with the sauce

TIPS
Freeze the sauce in a tight container. Reheat in a saucepan before serving simmering in low heat.
