Haddock With Mustard Sauce Recipe
Ingredients
2 pounds haddock, filleted
1 teaspoon salt
Juice of 1 lemon
6 cups water
1 tablespoon vinegar
1 onion, sliced
1 carrot
Few sprigs parsley
1/2 teaspoon thyme
8 peppercorns, crushed
1 bay leaf
2 tablespoons finely chopped parsley
1 lemon, thinly sliced
1 recipe mustard sauce or curry sauce
Directions
Rub the haddock fillets on both sides with salt and lemon juice.
Place the water, vinegar, onion, carrot, parsley, thyme, peppercorns and bay leaf in a large saucepan and simmer 30 minutes.
Add the fish and poach over low heat for 6 to 8 minutes.
Do not overcook.
Remove the fish and keep warm.
