Haddock Casserole Recipe
Ingredients
| Vegetable oil spray | ||
| Haddock fillets | 1/2 pound | |
| Potatoes | 3 , thinly sliced | |
| Cabbage | 4 Cup (16 tbs), chopped | |
| 3 medium-size tart apples, thinly sliced | ||
| Onion | 1 , chopped | |
| Ground black pepper | 1/2 Teaspoon | |
| Basil | 1/2 Teaspoon | |
| Marjoram | 1/2 Teaspoon | |
| Garlic powder | 1/2 Teaspoon | |
| Oregano | 1/2 Teaspoon | |
| 2 tablespoons acceptable margarine, melted | ||
| Skim milk | 1 Cup (16 tbs) | |
| Plain bread crumbs | 1/4 Cup (16 tbs) | |
| 1/4 cup grated low-fat Swiss cheese | ||
Directions
Preheat oven to 350° F.
Lightly coat a covered casserole dish with vegetable oil spray.
Rinse fish and pat dry.
Poach haddock .
Allow to cool slightly.
Crumble fish into prepared casserole dish.
Set aside.
Steam potatoes and cabbage 5 minutes.
Place potatoes, cabbage, apples and onion on top of fish in casserole dish.
Add seasonings.
Pour margarine over vegetable layer.
Top with milk.
Cover casserole and bake 45 minutes, or until potatoes are tender.
Uncover casserole, sprinkle bread crumbs and cheese on top and bake until brown and crusty, about 5 minutes.
