Hacienda Chicken Recipe

Ingredients
3 tbsp. butter or margarine
1/2 c. chopped onion
1 16-oz. can tomatoes
1 c. water
1/2 c chopped green pepper
1 2 1/2oz. can sliced mushrooms
1 tbsp. chopped parsley
1 tsp. paprika
1 tbsp. salt
1/4 tsp. pepper
1 stewing chicken, disjointed
1 c. rice
1/2 c. sliced green olives
Directions
Melt butter in heavy skillet or kettle.
Add onion; cook until lightly browned.
Add tomatoes, water, green pepper, mushrooms, parsley, paprika, salt and pepper.
Arrange chicken in skillet.
Cover; bring to a boil.
Reduce heat; simmer for 1 hour.
Add rice and olives.
Cook for 1 hour longer or until rice is done and chicken is tender.
Add onion; cook until lightly browned.
