Habitant Pea Soup Recipe

Ingredients
2 cups dried whole yellow peas
2 qts water
1 onion, minced
1/4 to 1/2 lb. salt pork
1 tablespoon chopped parsley
1/2 teaspoon sage or 1 teaspoon salted herbs
Salt and pepper to taste
Directions
Soak peas in cold water overnight.
The next day, add onion, salt pork, and desired seasoning.
Cover, bring to boiling, reduce heat, and simmer 3 to 4 hours.
Mix in salt and pepper.
NOTE: If pork is too salty, boil it for 5 minutes and drain before adding to the soup.
