Ghee-1/2 cup
Onion-1 small, chopped
Garlic-2 cloves, chopped
Bay leaves-2

Dry red chili-1, crushed
Green ginger-1/2 teaspoon, grated
Plain yogurt-1 (5 fluid ounces) carton
Veal kidneys-4, halved
Veal testes-4, halved
Water -1 1/4 cups
Salt- to taste
Coriander powder-1/2 teaspoon
Cinnamon -1 (1-inch) stick
Green cardamom -2 pods
Dash of mace powder
Garam masala-1/2 teaspoon
Directions
MAKING
1)In a pan, heat ghee on low and fry the onion and garlic until golden.
2)Add next 5 ingredients and fry until the dry for about 5 to 7 minutes.
3)Add kidneys and fry until light brown. Then, repeat the process, but with extra care with the testes.
4)Add half of water and simmer on medium heat for about 10 minutes.
5)Then, add remaining water and ingredients except garam masala. Simmer for about 10 minutes.
SERVING
6)Sprinkle garam masala on each portion and serve.
