Gumdrop Cake Recipe

Sift dry ingredients (flour, salt and spices).
Use some of flour mixture to dredge raisins and gumdrops (use scissors to cut gum drops and raisins before dredging in flour mixture).
Cream butter and sugar; add wellbeaten eggs.
Add flour mixture alternately with applesauce to creamed mixture.
Stir in soda, dissolved in water; add vanilla.
Add raisins, gumdrops and pecans.
Pour batter into two or three small loaf pans lined with greased brown or parchment paper.
Bake 2 hours in 300 to 325 degree oven.
If oven glass pans are used, do not line with paper, just grease them and bake at lower temperature, 275 to 300 degrees.
Cakes may be decorated by placing candied fruits (cherries, pineapple, etc.) in bottom of pan before pouring batter (Pam sprayed in pans to avoid sticking of fruit).
Cool on racks after removing from pans.
Wrap in brandy soaked cloths, wax paper and foil.
