Guinea Fowl With Mushrooms Recipe

Ingredients
4 1/2 1b (2 kg) guinea fowl
1 tbsp (15 ml) olive oil
1 tbsp (15 ml) butter
3 onions, quartered
1 Cup (250 ml) mushrooms, finely sliced
1/4 Cup (60 ml) black olives, pitted and quartered
2 tbsp (30 ml) tomato paste
3 Cups (750 ml) chicken stock
1 tbsp (15 ml) chopped parsley
Salt and pepper
2 tomatoes, seeded and julienned
Directions
– Bone the guinea fowl, cutting each of the legs and breasts into two pieces.
– In a stove-top casserole or heavy saucepan, heat the oil, melt the butter, and brown the pieces of guinea fowl on all sides.
– Add onions, mushrooms, and olives. Saute and stir well for about 4 minutes.
– Add tomato paste and stir well. Add the chicken stock and parsley, and season with salt and pepper.
– Bring to a boil, half cover, lower the heat, and simmer for about 1 hour.
– When done, the flesh will come away easily from the bone. Correct the seasoning and serve, garnished with the julienned tomatoes.
