Ingredients

 
2 cups guava pulp
 
4 teaspoons baking powder
 
1 generous cup sugar
 
1/2 teaspoon salt
 
1/8 Ib. butter
 
3 cups flour
 
3 eggs, well beaten

Directions

The guava pulp is prepared by simmering thinly sliced guavas in about 1/2 cup water for a few minutes, until soft.
Cream the sugar and butter and add the beaten eggs.
Add the guava pulp and beat until smooth.
Sift the baking powder, salt, and flour into the mixture very slowly, beating until the mixture is smooth and stiff.
Some Key Westers line a can with greased paper, pour the guava mixture into the can, and stand the can in a pot with boiling water a little more than halfway up the side of the can.
They then steam the duff for about 2 hours.
My mother in law cooks it just as successfully in an ordinary double boiler, but this method takes 3 to 4 hours.
The mixture comes from the can or pot in one piece, is chilled, and then sliced and served with hard sauce.
