Ingredients

 
2 medium-sized ripe avocados
 
1 cup diced peeled tomato
 
1/4 cup finely chopped scallions
 
2 tbsp. finely chopped canned chili peppers or 2 tsp. chili powder
 
2 tbsp. lemon juice
 
1 tsp. cumin
 
1 tsp. salt
 
1/8 tsp. pepper

Directions

Peel and mash 2 medium-sized ripe avocados.
Add 1 cup diced, peeled tomato, 1/4 cup finely chopped scallions, 2 tablespoons finely chopped canned chili peppers (or 2 teaspoons chili powder), 2 tablespoons lemon juice, 1 teaspoon cumin, 1 teaspoon salt and 1/8 teaspoon pepper.
Mix well.
Press plastic wrap closely over surface of guacamole to prevent it from darkening.
Chill until serving.
Serve with carrot sticks, cauliflowerettes, cucumber sticks, cherry tomatoes and radishes.
Note:
This also serves admirably as a spread on toast fingers, circles or triangles.
For garnish, use parsley sprigs or sliced cherry tomatoes, shredded carrots or olive slices.
