Guacamole Recipe
Ingredients
1 ripe avocado (8 ounces), pared and pitted
3 tablespoons lemon juice
4 ounces Canadian-style bacon, sauteed and diced
1 medium tomato, blanched, peeled, seeded, and chopped
2 tablespoons each minced onion and drained canned mild green chilies
1 tablespoon chopped fresh Italian (flat-leaf) parsley or 1 teaspoon parsley flakes
1 tablespoon chopped fresh coriander or 1/2 teaspoon ground
1/2 teaspoon salt
1 small garlic clove, mashed
Dash pepper
Directions
In medium bowl, using a fork, mash avocado with lemon juice into a smooth pulp; stir in remaining ingredients.
Cover with plastic wrap and refrigerate for at least 1 hour.
