Guacamole Dip With Crudites Recipe
Ingredients
| 2 ripe avocado pears | ||
| Lemon juice | 1 | |
| Garlic | 1 Clove (5gm), crushed | |
| 4 small tomatoes, peeled, seeded and chopped | ||
| Onion | 1 Small, peeled, finely chopped | |
| Celery stick | 2 , finely chopped | |
| Parsley | 1 Tablespoon, chopped | |
| Olive oil | 2 Tablespoon | |
| Seasoning | ||

| 1 red pepper, seeded | ||
| 1 green pepper, seeded | ||
| Carrots | 4 , peeled (For the crudMs:) | |
| 1 small headfennel | ||
Directions
1. Peel avocados and remove stones. Mash finely with a fork and mix with lemon juice, garlic, if used, tomatoes, onion, celery, parsley, oil and seasoning to taste.
2. Place in refrigerator to chill before serving.
3. Prepare the crudites and cut into sticks 7 cm/3 inches long and quite thin.
4. Serve the guacamole in a small dish in the centre of a plate, arrange the crudites ound the edge.
